Only when durian with good maturity is selected, can it taste sweet and glutinous. When selecting, select two adjacent spikes and pinch them inward slightly. If you can easily let the spikes close, it means they are soft and mature. If you feel very laborious and can't pinch the cold, it means they are not mature and relatively new.
We can also distinguish whether the durian is mature according to its size and color. It's similar to selecting watermelon. The bigger the durian is, the better it's mature. Or we can see the color of the shell. The brighter the color, the yellow the better it's mature. If it's more cyan, it's not mature.
Carefully pick up the durian, you can put your finger on the depression between the two spikes, hold it steady and shake it gently. If you hear a sound inside, or a feeling of collision, it means that the pulp has been mature from the shell.
